Ingredients
Ingredients
- 1000 g beef chuck cut into 1 1/2-inch chunks
- 100 g smoked bacon chopped
- 300 g carrots thickly sliced
- 200 g onion diced
- 200 g peeled pearl onions fresh or thawed
- 400 g button mushrooms halved
- 4 cloves garlic minced, 12 g
- 500 ml dry red wine
- 480 ml unsalted beef broth 2 cups, plus water if needed
- 30 g tomato paste 2 tablespoons
- 30 g all-purpose flour about 1/4 cup
- 20 g unsalted butter
- 1 tablespoon olive oil 13.5 g
- 1 g dried thyme about 1 teaspoon
- 1 g ground black pepper about 1/2 teaspoon
- 4 g fine salt about 2/3 teaspoon
- 1 bay leaf remove before serving
Equipment
- 1 Oven-safe Dutch oven with lid
- 1 wide skillet
- 1 Tongs
- 1 Slotted spoon
Instructions
Prepare and cook
- Heat oven to 325°F (165°C). Pat beef dry and season with salt and pepper. Cook bacon in a Dutch oven over medium heat until browned, 5–7 minutes; transfer to a plate, leaving fat in the pot.
- Add olive oil and brown beef in batches over medium-high heat, about 3–4 minutes per side. Transfer to the plate. Lower heat and cook diced onion and carrots 5 minutes. Add garlic and tomato paste for 1 minute, then stir in flour for 1 minute.
- Pour in wine gradually, scraping browned bits from the base. Add broth, thyme, bay leaf, beef, bacon and collected juices. Bring to a gentle simmer, cover and place in the oven.
- Braise 2 1/2–3 1/2 hours, checking occasionally, until beef yields easily to a fork. Add a little water if the liquid reduces too far. Timing varies with the cut; extend gently if still firm.
- During the final 25 minutes, melt butter in a skillet. Brown mushrooms and pearl onions 10–12 minutes, stirring occasionally. Add to the Dutch oven and cook covered 15–20 minutes more, until onions are tender.
- Remove the bay leaf. If sauce is too thin, lift out solids and simmer liquid uncovered briefly before returning them. Divide into six portions. Potatoes, noodles and bread are separate optional sides.

Notes
Video reference: Sip and Feast, originally published 2023-09-28. The demonstration uses the same red-wine oven-braise method with chuck, bacon, mushrooms and pearl onions. This written recipe uses its own quantities and a slightly lower oven temperature; judge tenderness rather than the timer alone.
Nutrition estimate: ANSES Ciqual 2025 ingredient weights and Swanson unsalted beef broth label. The full wine energy is retained as a conservative calculation, not an alcohol-retention measurement. All measured bacon fat, butter, oil and salt are included; skimming changes values. Below-threshold values use half the threshold. No sides included. This dish is not alcohol-free. Illustrative USD cost assumptions, not live prices: beef $12, bacon $1.20, wine $4, mushrooms $3, carrots/onions/garlic $3, broth $1, butter/oil/flour/paste/herbs $2 = $26.20. Local prices, package sizes and leftovers change costs.
Refrigerate promptly in shallow containers, use within 3–4 days allowing for the age of starting ingredients, and reheat leftovers to 165°F (74°C).
