Ingredients

French Onion Soup
  • 3 tablespoons unsalted butter
  • 1 tablespoon extra-virgin olive oil
  • 3 pounds yellow onions about 6 large, halved and thinly sliced
  • 1 teaspoon fine salt plus more to taste
  • 2 cloves garlic minced
  • 1 tablespoon all-purpose flour
  • 1 cup dry white wine
  • 6 cups low-sodium beef stock
  • 4 sprigs fresh thyme
  • 1 bay leaf
  • 1/2 teaspoon freshly ground black pepper plus more to taste
  • 12 slices baguette about 1/2 inch thick
  • 2 cups Gruyère cheese shredded, about 7 ounces or 200 grams
  • 1/4 cup Parmesan cheese finely grated; optional

Equipment

  • 1 Large Dutch oven or heavy pot 5- to 7-quart capacity
  • 1 wooden spoon
  • 1 Rimmed baking sheet
  • 6 broiler-safe soup bowls

Instructions

Method
  1. Melt the butter with the olive oil in a large Dutch oven over medium heat. Add the onions and salt. Cook for 10 minutes, stirring often, until the onions soften. Reduce the heat to medium-low and continue cooking for 45 to 55 minutes, stirring every few minutes, until the onions are deeply golden brown and silky. If the pot becomes dry, add 1 tablespoon water and scrape up the browned layer.
  2. Stir in the garlic and cook for 30 seconds. Sprinkle in the flour and cook for 1 minute, stirring continuously, so it loses its raw taste.
  3. Pour in the white wine and scrape the bottom of the pot. Simmer for 3 to 5 minutes, until the wine has reduced by about half.
  4. Add the beef stock, thyme, bay leaf, and black pepper. Bring to a gentle simmer and cook uncovered for 30 minutes. Remove the thyme stems and bay leaf, then taste and adjust the salt and pepper.
  5. While the soup simmers, heat the oven to 400°F (200°C). Arrange the baguette slices on a rimmed baking sheet and toast for 8 to 10 minutes, turning halfway, until dry and golden on both sides.
  6. Preheat the broiler. Set 6 broiler-safe bowls on the baking sheet and divide the hot soup among them. Top each bowl with 2 toasted baguette slices, Gruyère, and optional Parmesan. Broil for 2 to 4 minutes, watching closely, until the cheese is melted, bubbling, and browned in spots. Serve carefully; the bowls will be very hot.

Notes

  • Choose a dry white wine such as Sauvignon Blanc or Pinot Grigio; avoid sweet wine.
  • To make it alcohol-free, replace the wine with 1 cup additional stock and stir in 1 teaspoon sherry vinegar after simmering.
  • Prepare the soup base up to 3 days ahead. Keep the toasted bread and cheese separate until serving.
  • Nutrition is an estimate per bowl and includes the bread, Gruyère, and optional Parmesan; values vary with the stock, bread, and cheese used.
