Ingredients
  

Jacket potatoes
  • 2 medium russet potatoes about 8 ounces each
  • 2 teaspoons olive oil
  • 1/2 teaspoon fine or flaky salt plus more to taste
  • black pepper and toppings optional

Method
  1. Preheat the air fryer to 400°F (200°C) if your model recommends preheating. Scrub the potatoes, dry them completely, and prick each a few times with a fork.
  2. Rub each potato with 1 teaspoon oil and sprinkle all over with salt.
  3. Place the potatoes in the basket with space around them. Cook for 40 to 50 minutes, turning once halfway through.
  4. The potatoes are done when a thin knife slides through the center with almost no resistance and the sides yield gently when squeezed with tongs. Add 5-minute increments for larger potatoes.
  5. Cut open promptly, squeeze the ends toward the center, and fluff the flesh with a fork. Add pepper and your preferred toppings.
