Ingredients

Mousse
  • 12 ounces soft silken tofu 340 g after pouring away loose liquid; choose a ready-to-eat product
  • 7 ounces dark chocolate, 60–69% cacao 200 g, finely chopped
  • 1 small pinch table salt 0.4 g

Equipment

  • 1 microwave-safe bowl
  • 1 food processor or blender
  • 1 Spatula
  • 6 small dessert cups

Instructions

Method
  1. Check that the tofu is suitable for ready-to-eat use; if its package requires cooking, follow that instruction and cool safely before proceeding. Pour away loose liquid without pressing the tofu.
  2. Melt the chopped chocolate in a dry microwave-safe bowl in 20-second bursts, stirring between each, until the final small pieces melt with stirring. Allow briefly to cool while remaining fluid.
  3. Blend the tofu until uniform. Add the melted chocolate and salt, then blend just until smooth, stopping to scrape down the bowl so no pale tofu streaks remain.
  4. Divide among six small cups, cover and refrigerate at 40°F (4°C) or below for at least 2 hours, until set. Serve cold, with optional toppings added only at serving time.

Notes

Yield: six small portions, about 90 g each before any toppings. Contains soy; check chocolate for milk and other allergens. Use within three days, or sooner if the tofu package specifies a shorter opened-storage period. Nutrition uses USDA SR Legacy MORI-NU soft silken tofu (340 g), generic 60–69% dark chocolate (200 g) and table salt (0.4 g), divided by six; it is an estimate and current brand labels may differ, including calcium, sugar and trace cholesterol in the generic chocolate record. Vitamin C is omitted because complete ingredient data are unavailable. Optional toppings are not included.
