Ingredients
Spinach dip
- 10 ounces frozen chopped spinach thawed
- 16 ounces sour cream
- 1 cup mayonnaise
- 1 package dry vegetable soup mix about 1.4 ounces
- 1 can water chestnuts 8 ounces, drained and finely chopped
- 3 green onions finely sliced
Equipment
- 1 large mixing bowl
- 1 Colander
- 1 Rubber spatula
Instructions
Method
- Place the thawed spinach in a colander. Squeeze it in a clean kitchen towel until very dry, breaking up any tight clumps.
- Stir the sour cream, mayonnaise, and dry vegetable soup mix together in a large bowl until evenly blended.
- Add the dry spinach, chopped water chestnuts, and green onions. Fold until the spinach is evenly distributed and no pale streaks remain.
- Cover and refrigerate for at least 2 hours so the vegetables soften slightly and the seasoning blooms.
- Stir once more, taste, and spoon into a serving bowl. Serve cold with sturdy crackers, bread cubes, or crisp vegetables.

Notes
Squeeze the spinach until it feels almost too dry; excess water is the main cause of thin dip. Refrigerate leftovers promptly and use within 3 days. At a party, keep the bowl nested over ice and do not leave dairy-based dip at room temperature for more than 2 hours. Check the soup-mix label if you need a gluten-free dip.
