Ingredients

For one latte
  • 1/2 cup fresh strawberries 80 g hulled and chopped
  • 2 teaspoons pure maple syrup 14 g; adjust to taste
  • 1 teaspoon unsweetened matcha powder 2 g; use a level spoon
  • 1/4 cup hot water 60 mL at about 176°F (80°C)
  • 3/4 cup cold 2% milk 180 mL, about 183 g
  • 1/2 cup ice cubes about 70 g; enough to chill the drink

Equipment

  • 1 Fine-mesh tea strainer
  • 1 Wide mixing bowl
  • 1 Bamboo matcha whisk
  • 1 Fork and small bowl
  • 1 16-ounce glass

Instructions

Prepare and assemble
  1. Rinse and hull the strawberries. Chop, then mash with the maple syrup in a small bowl until juicy, with only small soft pieces remaining.
  2. Sift the matcha through a dry fine-mesh strainer into a wide bowl. Add the measured hot water and whisk with quick M-shaped strokes for about 15 seconds, continuing if needed until evenly green with no visible dry clumps. Let it stand briefly while preparing the glass.
  3. Spoon all the strawberry mixture into a 16-ounce glass. Add the ice, then pour the cold milk gently over it, leaving room for the matcha.
  4. Pour the whisked matcha slowly over the milk. Admire the layers if you like, then stir gently before drinking so the fruit, milk, and tea mingle. Taste and add a little more syrup only if needed; serve immediately.

Her version cooks the berries into a compote and includes grass jelly; this recipe uses freshly mashed strawberries, maple syrup and no jelly. Follow the recipe above for its quantities and matcha water temperature.

Notes

Contains milk and caffeine. Plant milk can replace the same volume, but flavor and nutrition change. For a smoother fruit layer, briefly purée the strawberries instead of mashing; do not strain if using the stated nutrition estimate.
Use unsweetened matcha, not a sweetened latte mix. Keep the fruit and milk refrigerated until needed and assemble just before drinking. Natural settling is normal; stir again as needed.
Nutrition is estimated for one entire latte using 80 g strawberries, 14 g maple syrup, 183 g 2% milk, and 2 g matcha. Calculated from USDA SR Legacy records 167762, 169661, and 171267, with matcha from Japan MEXT food 16035 (2023 tables). Water and ice add no calories; extra sweetener and substitutions are excluded. Brand and ingredient variation apply.
