Ingredients

Ingredients
  • 454 g 85% lean ground beef 1 pound
  • 454 g 85% lean ground pork 1 pound
  • 30 g plain panko breadcrumbs about 1/2 cup
  • 60 ml Worcestershire sauce 4 tablespoons, divided
  • 1 large egg about 50 g without shell
  • 1.5 g ground allspice 3/4 teaspoon, divided
  • 1.5 g ground nutmeg 3/4 teaspoon, divided
  • 4.5 g fine salt 3/4 teaspoon, divided
  • 1.5 g black pepper 3/4 teaspoon, divided
  • 13.5 g olive oil 1 tablespoon
  • 57 g unsalted butter 4 tablespoons
  • 60 g all-purpose flour 1/2 cup
  • 960 ml unsalted beef stock 4 cups
  • 160 g full-fat sour cream 2/3 cup

Equipment

  • 1 Large skillet
  • 1 Mixing bowl
  • 1 Whisk
  • 1 Instant-read thermometer

Instructions

Prepare and cook
  1. Combine beef, pork, breadcrumbs, 30 ml Worcestershire, egg, 1 g each allspice and nutmeg, 3 g salt and 1 g pepper. Mix just until combined. Shape into evenly sized meatballs about 1 inch across.
  2. Heat olive oil in a large skillet over medium heat. Brown the meatballs in batches, turning carefully, and cook until their centers reach 160°F (71°C). Transfer to a clean plate. Avoid crowding the skillet.
  3. Add butter to the skillet. Once melted, whisk in flour and the remaining 0.5 g each allspice and nutmeg. Cook 1–2 minutes, stirring. Gradually whisk in the beef stock, then the remaining 30 ml Worcestershire, 1.5 g salt and 0.5 g pepper.
  4. Simmer gently for 3–5 minutes, whisking, until the gravy thickens. Reduce heat to low and stir in sour cream until smooth; avoid a vigorous boil.
  5. Return the meatballs and their juices. Warm gently for about 5 minutes, coating them with gravy. Divide into six portions. Noodles, mashed potatoes and preserves are optional accompaniments, excluded from the estimates.
