Ingredients
Bark
- 240 g soft Medjool dates pitted weight; about 10–12 large dates, but weigh after pitting
- 3 tablespoons plain tahini 45 g, thoroughly stirred
- 100 g 70% dark chocolate finely chopped
- 2 teaspoons toasted sesame seeds 6 g
Equipment
- 1 8-inch square pan
- 1 Parchment paper
- 1 microwave-safe bowl
- 1 spoon
- 1 Sharp knife
Instructions
Layer and chill
- Line an 8-inch square pan with parchment, leaving overhang. Open and inspect the dates, remove any pits or fragments, and lay the dates cut-side up with edges overlapping.
- Cover with a second piece of parchment and press firmly into a connected, roughly even layer. Remove the top parchment.
- Spread the stirred tahini thinly over the dates, stopping just short of the edges.
- Melt the chocolate in a dry microwave-safe bowl in 20-second bursts, stirring between bursts, until just smooth, about 1–2 minutes in total. Do not let water enter the bowl.
- Drizzle chocolate across the tahini and spread gently into a thin, continuous layer. Sprinkle with sesame seeds.
- Refrigerate for about 30 minutes, or until the chocolate is set. Lift from the pan, let stand for a few minutes if very firm, then cut into 12 pieces.

Notes
Nutrition is an ingredient-based estimate per one-twelfth of the slab using USDA SR Legacy dates, tahini, 70–85% dark chocolate, and toasted sesame records. Chocolate brand and date size affect the estimate; pitted gram weight controls the formula. Unavailable nutrient subfractions are not invented. Sesame-seed sugar uses the USDA raw whole-seed value as a small-quantity proxy. Date saturated fat uses the rounded 0 g label value documented for Natural Delights Medjool dates; other unavailable fatty-acid subfractions are omitted.
Contains sesame. Check chocolate for milk, soy, and relevant cross-contact labeling. Keep covered in the refrigerator and use within one week for best quality; freeze well wrapped for longer storage and soften slightly before eating.
