Ingredients

Dip
  • 1 1/2 cups fully cooked cannellini beans 250 g drained; canned no-salt-added beans, rinsed and well drained
  • 2 tablespoons olive oil 27 g
  • 2 tablespoons lemon juice 30 g
  • 1 small clove garlic 3 g, peeled
  • 1/4 teaspoon fine salt 1.5 g
  • 2 tablespoons water 30 ml, plus up to 2 tablespoons (30 ml) as needed
  • 1 tablespoon finely chopped parsley 4 g

Equipment

  • Small food processor
  • Rubber spatula
  • Colander
  • Measuring cup and spoons
  • Kitchen scale

Instructions

Blend and finish
  1. Drain and rinse the fully cooked beans, then let excess water drain away. Measure 250 g into a small food processor.
  2. Add olive oil, lemon juice, garlic, salt, and the initial 2 tablespoons of water. Process until combined, then stop and scrape the sides and bottom with a spatula.
  3. Process again until smooth. If too thick to scoop comfortably, add extra water 1 tablespoon at a time, processing and scraping after each addition. Stop when a spoonful holds a soft mound.
  4. Transfer to a bowl and stir in the finely chopped parsley. Taste with a vegetable or piece of bread; adjust only if needed.
  5. Serve a portion immediately, or transfer to a covered container and refrigerate promptly. Divide the finished batch into 6 equal servings.

Notes

Nutrition is an estimate for one sixth of the batch, without dipping vegetables, bread, or optional additions. Calculated from USDA SR Legacy ingredient weights; generic cooked no-salt white beans model the rinsed no-salt-added beans. Brands and drained weights vary, especially sodium.
Store covered at 40°F (4°C) or below and use within 3–4 days as a conservative leftover plan. Refrigerate within 2 hours, or 1 hour above 90°F (32°C). Lemon juice does not make this dip shelf-stable.
Contains no added sesame or dairy ingredients; check individual labels and cross-contact needs for allergies.
