Ingredients

Base
  • 1 1/2 cups sweetened flaked coconut 180 g; loosely filled cups
  • 1 cup chopped pecans 109 g
  • baking spray for the pan
Chocolate batter
  • 1 box Betty Crocker German chocolate cake mix 13.25 oz / 375 g; see package note
  • 1 cup water 240 ml
  • 1/2 cup vegetable oil 120 ml
  • 3 large eggs
Cream-cheese filling
  • 8 ounces full-fat block cream cheese 227 g, softened
  • 1/2 cup salted butter 113 g, softened
  • 2 cups powdered sugar 240 g, spooned and leveled

Equipment

  • 1 9-by-13-inch metal baking pan at least 2 inches deep
  • 2 Mixing bowls
  • 1 electric hand mixer
  • 1 Butter knife for light swirling
  • 1 Wire cooling rack

Instructions

Prepare the layers
  1. Heat the oven to 350°F (175°C), with a rack in the middle. Grease a 9-by-13-inch metal baking pan at least 2 inches deep. Distribute coconut across the bottom, then scatter pecans evenly over it.
  2. Beat the softened cream cheese and butter until smooth. Add the powdered sugar gradually at low speed, then beat just until creamy. Set aside.
  3. In a separate bowl, mix the specified cake mix with water, oil and eggs at medium speed for 2 minutes, following the current package. Pour the batter over the coconut and nuts without stirring the base.
Swirl, bake and cool
  1. Drop tablespoon-size spoonfuls of filling across the batter. Pass a butter knife through the top a few times, keeping distinct pale patches and leaving the bottom layer undisturbed.
  2. Bake for about 50–60 minutes, starting checks at 45 minutes. The edges should be set, and the chocolate areas should spring back lightly. A tester in chocolate cake should show moist crumbs, not liquid batter; filling pockets can leave creamy streaks. If the top darkens early, tent loosely with foil and continue until the cake is baked through.
  3. Rest the pan on a rack for 30 minutes. Cut into 15 squares and serve, or move portions to shallow containers and refrigerate promptly. Refrigerate within 2 hours of baking, or 1 hour above 90°F (32°C). Keep covered at 40°F (4°C) or below for 3–4 days.

Notes

Formula adapted from Tammy Nichols, Collard Valley Cooks. The instructional video demonstrates the same layered cake and light-swirl method. Follow the exact box directions for the mix you use; box sizes and batter additions vary. Our amounts match the current 13.25-ounce Betty Crocker German chocolate mix. Do not add a second set of eggs, water or oil. Bake time is approximate; allow 110 minutes including cooling.
Estimated nutrition is per 1/15 pan: the full mix label, 8 tablespoons oil, 3 large eggs, 8 ounces cream cheese, 8 tablespoons butter, 240 g powdered sugar, 180 g sweetened coconut and 109 g pecans, summed and divided by 15. Basis: Betty Crocker, Crisco and Land O’Lakes labels; Philadelphia and Baker’s package-label listings; Domino sugar label; USDA-based egg and pecan reference values. Baking spray and optional toppings are excluded. Labels and serving size change the estimate; micronutrients without complete ingredient data are not reported. This is not a laboratory analysis.
Contains wheat, milk, eggs and pecans; check all product labels for additional allergens. Cost depends on local prices and is not estimated. Keep the cream-cheese filling in distinct pockets rather than blending it into the batter.
