Crisp-edged blender waffles made with rolled oats, cottage cheese, eggs, and milk for about 18 grams of protein per serving.

Ingredients
  

  • 2 cups old-fashioned rolled oats use certified gluten-free if needed
  • 1 cup small-curd cottage cheese 2% or full-fat
  • 3 large eggs
  • 1/2 cup 2% milk plus more only if needed
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract optional
  • 1/2 teaspoon ground cinnamon optional
  • 1/4 teaspoon fine salt
  • neutral oil or cooking spray for the waffle iron

Instructions
 

  1. Preheat the waffle iron thoroughly according to the manufacturer’s directions.
  2. Add the oats to a blender and blend until they resemble coarse flour. Add the cottage cheese, eggs, milk, baking powder, vanilla, cinnamon, and salt.
  3. Blend just until smooth, scraping down the sides if needed. Rest the batter for 5 minutes; add milk one tablespoon at a time only if it is too thick to pour.
  4. Lightly grease the hot waffle iron. Add the amount of batter recommended for your machine and cook until deep golden, the steam has slowed, and the waffle releases easily.
  5. Transfer each waffle to a wire rack. Serve immediately or keep warm on the rack in a 200°F (95°C) oven while finishing the batch.
